Every 100 years, the food of a region completely change.
India is a vast country and every 100 kilometers you travel, you encounter a new culture, a new cuisine. You encounter the same ingredients used in different ways, lending an altogether different flavor to the dishes.
Over many decades, dishes have either become unavailable from the daily menu of a common man; or have lost relevance because the ingredients are difficult to get by.
Another reason is the extensive preparation and time required to cook the dish.
This is an attempt to recreate some of the lost dishes from Indian cuisine and give them a touch of modernity without impacting the essence of their originality.
